These small rusks are made of wheat flour and sesame seeds. Sesame is a highly nutritional food, rich in calcium, B complex vitamins and has a high content of essential polyunsaturated fatty acids.
The Cretan wheat rusks with sesame seeds, with the distinct traditional Cretan character, could also be considered a variation of the Thessaloniki’s favorite sesame ‘koulouri’, since their preparation is almost identical in both their ingredients and the quantities of ingredients used. Their difference lies in their different shape, size and texture, since the Cretan wheat rusks contain no moisture and have the dry texture characteristic of a rusk.
These can be eaten alone or with cheese and tomatoes. You can also serve them with other appetizers as an accompaniment to ouzo, tsipouro or raki.
