Small efta zymo wheat rusks
Efta zymo is a mysterious product whose recipe is also rather mysterious. It is called efta zymo because it is kneaded 7 times until it becomes bread followed by the process through which it becomes a rusk. It is produced from chickpea leaven without the use of bakery yeast; chickpea leaven giving a distinct flavor as well as an intense unique aroma to the final product.
Its mysterious character is the result of the various traditions and beliefs built around its name. Like that it must be kneaded with a silent water, that is, the woman carrying the water for the kneading process should not speak. Also, efta zymo dough can receive the evil eye and not rise. That’s why tradition says it must be secretly kneaded by everyone late in the evening as well as other things that make it so special. Our wheat and barley efta zymo rusks also feature chickpea leaven. Chickpeas have an increased content of minerals, especially iron, calcium and magnesium, a high percentage of proteins that contain essential amino acids for protein synthesis in the human body and are rich in phytoestrogens and fiber.
