Lentils with sundried tomatoes, feta and small olive oil rusks
for this recipe, we suggest
INGREDIENTS
For 2 servings:
- 7-8 “the Manna” Small rusks with Olive Oil, with no added salt
- 200 g braised lentils
- 6 sundried tomatoes
- 1 cucumber
- Several mint leaves
For the dressing:
- 4 tablespoons of olive oil
- 2 tablespoons of balsamic vinegar
- Salt
- Pepper
- 5-6 mint leaves
EXECUTION
Finely chop the cucumber and sundried tomatoes.
Cut the feta into cubes.
Put them all in a bowl with the rusks and mix.
Add the mint leaves.
Add the dressing and mix again.
Of course, you can add any other “the Manna” Tsatsaronakis rusk to this dish.
* All olive oil products are made with Cretan olive oil.
